Elena Monari of Monari Federezoni was the very first operator to ever be granted a license to sell balsamic vinegar in the town of Modena. She played a pivotal role in establishing the consortium responsible for the sale, distribution and regulation of Balsamic Vinegar of Modena. This vinegar then – as you may suspect – represents the apex of the craft. Rich, aromatic acids; tenuous but present floral notes and the usual characteristics dominion to a cask aged balsamic. The 'Elsa' is absolutely stunning. Even the lightest drizzle will set foods alight with sweet, sparkling acid.
